Roasted sweet potatoes! This is probably my favorite part of this week/ last week’s meal prep!!

 

I’m not even going to lie, it’s a struggle to cut them into small pieces lol but it’s worth it! I also always make sure to keep the skin on them. I use garlic and black pepper as the seasonings. 😋🥔
